Course Objectives

The student

o       evaluates the nutritional needs of individuals  and families in relation to health and wellness across the life span.
o       demonstrates ability to acquire, handle, and use food to meet the wellness needs of individuals and families across the life span.
o       evaluates factors that affect food safety from production through consumption.
o       evaluates the impact of science and technology on food composition, safety and other issues.
o       analyzes career options in the nutrition and culinary fields.

Performance Indicators

The student

Examines the relationship between nutrition and wellness to individual and family health through the life cycle.
Assesses the impact of food and diet fads, food additives, and eating disorders on wellness.
Designs strategies that meet the health and nutrition requirements of individuals and families with special needs.
Evaluates sources of food and nutrition information including food labels relating to wellness.
Demonstrates the ability to select, store, prepare and serve nutritionally aesthetically pleasing meals.
Appraises safety and sanitation practices throughout the food chain.
Examines governmental inspection and labeling systems that protect the pubic.
Monitors food borne illness as health issue for individuals and families.
Determines how scientific and technical advances impact the nutrient content, availability, and safety of foods.
Determines the impact of technological advances on selection, preparation, and home storage of foods.
